Petros S. Taoukis is a Diploma Chemical Engineer, NTUA - MSc, PhD Food Science University of Minnesota US. Professor at the National Technical University of Athens, School of Chemical Engineering, Laboratory of Food Chemistry and Technology. Research in the areas of food processing, quality and shelf life predictive modelling, predictive microbiology, enzyme technology, HHP processing, PEF, osmotic processing, intelligent packaging and cold chain management. Active participation in European research projects and management of National/EU supported multipartner projects. He coordinated the RTD project SMAS (www.smas.chemeng.ntua.gr/) of Framework 5 –Quality of life (QLK1-CT2002-02545) and the project FAIR-CT95-1090 “Development, Modelling and Application of Time Temperature Integrator Systems to Monitor Chilled Fish Quality”. Scientific leader of the NTUA team in H2020, FP7, FP6, FP5 and FAIR European Projects e.g. FP7 SOPHY (www.sophy-project.eu), FRISBEE (www.frisbee-project.eu), IQ-Freshlabel “Developing novel intelligent labels for chilled and frozen food products and promoting the influence of smart labels application on waste reduction, food quality and safety in the European supply chains”, FP6 Freshlabel “Integrated Approach to enable Traceability of the Cold chain of Fresh Chilled Meat and Fish Products by means of tailor-made Time/Temperature Indicators”, ERA-NET COFASP SushiFish (www.sushifish.eu). EU-National projects on new food processing technologies, biofunctional products and fish technology, e.g. EPAN TR-29 AQUASOFT “Development of production technologies for innovative fish feeds for reared Mediterranean species” and relevant projects funded by the Greek Operational Programme for Fisheries 2014-2020. Theofania (Fanny) Tsironi (Orcid code: 0000-0002-6348-8846). She holds a Diploma in Chemical Engineering with specialization in Food Engineering and Biotechnology, Master of Public Health with specialization in Biostatistics and Epidemiology and PhD in Food Engineering. Her principal research is in the fields of quality and shelf life modelling of chilled and frozen food, packaging, predictive microbiology, no thermal processing (e.g. high pressure processing, osmotic dehydration) and cold chain management by application of intelligent and packaging (e.g. TTI systems, edible coatings). She actively participates/participated in 20 multi-partner research projects (Task leader since 2008, WP leader since 2016). Postdoctoral Fellow (IKY-Siemens Excellence Fellowships for postdoctoral research) for the period 9/2016-8/2017 at the Technological Educational Institute of Athens (Thematic area: Health, Field: Biotechnology-Molecular biotechnology). Her research activities focus mainly on fish and seafood products, aiming to optimize postharvest processing and storage, fish feed technology and improved seafood quality and safety. A number of her research findings were awarded a prize in national and international competitions (PhD thesis was awarded one of the top 4 experimental dissertations of year 2010 in School of Chemical Engineering of National Technical University of Athens, Stamos Stournas award - George F. Stewart International Research Paper Competition, IFT Annual Meeting & Food Expo, Chicago, IL, 2010 - Association of the Greek Manufacturers of Packaging and Materials, 1st Greek Conference on Packaging, Greece, 2008 - IChemE Journals 2015 Best Reviewers Award, Elsevier). Results of her research have been published in 24 peer reviewed journals, 5 book chapters and more than 100 scientific conference proceedings (h-index 9, source Scopus).
